Prawn – Soya Pulao

PLEASE NOTE :
The same preparation can be done only with Paneer and Soya chunks for those who do not take non Veg

 

Keep your dry spice powder ready :
1/2 tsp Fennel
1/2 tsp Cumin
1/4 tsp ShaJeera
4 cloves
4 green cardamom
2″ thin stick cinnamom
1 tbsp Javetri/Mace
a little Nutmeg Grind them properly.

Ingredients:
15-20 medium sized prawn
2 cup thinly sliced onions
2 Tsp Ginger garlic paste
1 tomato chopped
2 bay leaf, 1 brown cardamom,1/2 tsp Kshmiri mirch,1tsp dried mint,1 tbsp fresh mint,1 tbsp chopped corainder.
1 cup coconut milk
Ghee as required.

Preparation:

marinate the prawns with salt and turmeric and a 1/4 tsp of that spice powder

Wash and soak 1&1/4 cups of rice in water
Heat 1 tbsp Oil. Saute the shrimp till they turn pink-yellow. Remove and keep aside.
add 1 more tbsp ghee to same pan,temper the ghee/oil with
2 Bay Leaf
1 Big Brown Cardamom after sometime add the sliced onions.
Sprinkle 1/4 tsp of sugar and fry the onions till soft and golden. stir for 5 mins and then add the Ginger-Garlic Paste.
Add 1 tomato chopped and wait till it is cooked. Once the tomatoes are cooked add the half of the dry masala, kashmiri mirch, dried mint and fresh mint. Saute them for few minutes

Later add the coconut milk thinned with water. Let the gravy come to a boil. At this point add salt to taste and the fried shrimp and the soya chunks.Let the gravy thicken.
Once the gravy is thick, remove the shrimp and keep aside.
Mean while in a separate fry pan heat 1 tbsp Ghee. Temper the ghee with few cloves(4) and green cardamom.
Drain the rice and add it to the fry pan. Fry the rice at low heat say for 3-4 mins.

Add the fried rice to the gravy ,Add the remaining spice powder. Mix gently. Now add double the amount of water (2:1 ratio of water to rice), cover and let the rice cook. Once the rice is almost done, add the shrimp(that you had removed and kept aside)
along with any gravy it has. Add 1/2 tbsp of ghee. Let the rice finish cooking.
