Chicken Casserole

Am just sharing my new and favorite recipes here. Always love to prepare some continental food at times it turns out good ;)


Chicken breast piece – 3 piece

Salt – to taste

Pepper – to taste

Olive oil – 1tbsp

Crushed red pepperĀ  – to sprinkle

Parmesan cheese – 75g

Mozzarella cheese – 75g

Croutons – 50 to 100g

Herbs – Parsley, Oregano & Basil ( 2 pinch each – dry powdered)

Tomato sauce / Tomato puree – 500g

Method of Preparation :

Marinate the chicken breast with salt and pepper and keep it aside for 10mins. Then add Olive oil in a skillet and cook the sides of the chicken for about 2mins each side and turn off. Pre-heat Oven to 350 degree and grease the baking bowl with Olive oil and with little amount of chilli flakes all over the bowl. Place the half-cooked chicken in the bowl. Mix the tomato sauce / tomato puree with all herbs and little salt and apply a layer of this mixture over the chicken. Sprinkle 2tbsp of Parmesan and 2tbsp of Mozzarella cheese on top of the mixture and place few croutons on it. Again sprinkle 1tbsp of Mozzarella & Parmesan cheese on top of it, and place the bowl in the oven. Cook it for 35 – 45 minutes or until the chicken is well cooked.

Serve hot with coriander and tomato garnished on top of it. Best for a great dinner with a fresh salad and a fruit juice is a great combo.
