Brussels Sprouts Rice with Potato and Capsicum Gravy

Brussels Sprouts Rice:

Ingredients
Rice 1 cup
Brussel Sprouts 2 cup
Carrot 1/4 cup
Capsicum 1/4 cup
Spring onion 1 bunch
Pepper 1 tsp
Sugar 3/4 tsp
Salt to taste
oil 2-3 tblsp

Method:
1.Soak rice for about 15 minutes and cook it with water ratio 1 : 1. Keep aside to cool.
2.Chop Brussels Sprouts, carrot and capsicum finely.
3.Heat oil in a pan and fry the white part of the spring onion for a minute.
4.Add Brussel sprouts, carrot and fry for 2-3 minutes, add sugar and pepper. Finally add capsicum and fry for another minute in high flame.
5.Add the green part of the spring onion and required salt. Mix well.
6.Now add the cooked rice and mix properly until everything gets mixed well.
Serve it hot .

Potato and Capsicum gravy:

Ingredients
Capsicum – 1 cup
Potato – 1 cup
Onion 1
Tomato 1
Green chilli 2
Garlic flakes 3
Ginger – a small piece
Cashew – 6 pieces
Red chilli powder 1/2 tsp
Coriander powder 2 tsp
Garam masala powder 3/4 tsp
Turmeric powder a small pinch
salt to taste
Oil As needed
Jeera 1 tsp

Method:
1.Grind onion,tomato,green chillies,Garlic, Ginger, cashew to a smooth paste.
2.Cut the potatoes in a round shape and capsicum in a lengthwise.
3.Heat a pan and add 1 tblsp of oil. Saute the capsicum in a medium flame and keep it aside.
4.Add 3 tblsp of oil and fry the potatoes till it turns to golden colour and soft. Drain from oil and keep it aside.
5.Temper with jeera.
6.Add the ground paste and chilli powder,garam masala,coriander powder and turmeric powder. Add salt. Mix well and fry in medium flame until the raw smell goes.
7.Add the fried capsicum and potatoes and add 1/2 cup water and mix. Boil in medium flame for 2-3 minutes until the masala coats the potatoes and capsicum.
Serve it with rice or chapati.

    Now that is a quite an innovative dish dear. Have only heard of checikn 65. Wouldn’t all vegetarians and cheese lovers love this dish? I am thinking they have gone mad if they don’t. Looks awesome!
